“Portable” Queso de Bola

Whether or not it’s Christmas, I love snacking on queso de bola. I like eating it on its own, or with pan de sal. Sometimes I even gnaw on little slivers melted for less than a minute in the microwave to get a mozzarella-like consistency. This addiction became easier to indulge after I discovered the Queso De Bola Spread of La Cocina de Tita Moning. It’s exactly like regular queso de bola, from the sharp taste to the pungent smell, except the shape is different. The cheese is already melted and poured into a jar, ready to be spread anytime on pan de sal for breakfast, or plopped on mini crostinis to serve at parties.
The stuff is so easy to use and carry, there should be no trouble transporting it through most airports for relatives abroad who are longing for a taste of home. (Please note we say “most”—not “all”—airports. Quarantine policies differ from country to country.)
The Queso de Bola Spread comes in two sizes: the smaller jar (7 oz, 200 g) goes for P200, while a larger one (10 oz, 300 g) costs P280. La Cocina de Tita Moning is the ancestral-home-turned-restaurant at 315 San Rafael St., San Miguel District, Manila. Call them at 734-2146/41 or visit their website www.lacocinadetitamoning.com for more information.
Those who live too far from the Manila area can visit the La Cocina stall at the Salcedo Market in Makati, open every Saturday from 6 am to 2 pm.

finally an easier way to eat queso de bola! i love melting slivers too in the microwave. the thinner they are, the better. i slice lots of slivers then keep them in a container so when i feel like munching on them, it’s ready to eat.
